2 pounds Sweet Potato peeled and diced.
1/2 cup butter
1/2 cup brown sugar
1/2 cup brandy
1/2 teaspoon salt
Place sweet potatoes in a large saucepan with enough water to cover. Boil for 15 minutes. Until Tender but firm. Drain and set aside.
In a large skillet over low heat, melt the butter, stir in the brown sugar, brandy, and salt. Add the sweet potatoes, and stir to coat. Cook, stirring gently until the sweet potatoes are heated through and well glazed.
2 cups yam, boiled and diced
2 stalks celery ; Diced and Sliced
1 tablespoon chopped onions
1 tablespoon sweet pepper, chopped
1 tomato, medium size lettuce or parsley
2 eggs, Hard boiled and chopped mayonnaise
pinch of black pepper
1 Mixed diced yam, vegetables and chopped eggs.
2 Add mayonnaise and black pepper to taste. Blend
3 Garnish with lettuce or parsley and tomato wedges.
4 Chill and serve.
1 Lb Yellow yam
1 Cup milk
2 Tbs Grated Cheese
1 Oz Maragine
1 Boil yam in salted water and drain water.
2 Mash yam adding milk a bit at a time.
3 Add Sausage mashed and margarine and mix well.
3 Put in a 5 x 3 oven dish and bake at 350 deg. When almost sprinkle cheese on top. Continue baking until done.
4 Tablespoon Margarine
1/2 Cup sugar
3 Tablespoons Lime Juice
1 tablespoon Lime rind
1 Pie shell
3 Eggs, Separated
1/4 Teaspoon cinnamon
2 cups mashed potato
1 cup milk
1 Cream butter until soft adding sugar gradually. Continue until mixture is well blended.
2 Add lime juice and rind.
3 Add beaten eggs yolk, cinnamon, mashed potato and milk, mix thoroughly.
4 fold in stiffly beaten egg whites.
5 Line pie dish with pastry and pour in mixture.
6 Bake in oven at 350 deg until done.
7 Arrange siffly beaten egg white on top.
8 Decorate garnish with Cherries.
